I am in need of a Chef for a full service restaurant in Burlington VT. Our main menu is set however we do allow creativity with our small plates menu. The successful chef candidate will ensure the execution of our menu, manages food and labor costs, supervises kitchen staff in a structured, fair, hands-on style, and maintains the highest standards of sanitation on a continuous basis.

Operational
Responsibilities:
Staff
Interviewing and approval of all kitchen hires.
Supervision and co-ordination of all staff working in the kitchen, including dishwasher and prep staff.
Prepares weekly schedules using our labor forecast system.
Oversees training of all staff with regard product, equipment, health & hygiene.
Builds a cohesive team of motivated, multi-skilled and responsible staff through hands on participation in all aspects of kitchen operation.
Must be a team player!
Food
Leads and supervises cooks and dishwasher during through hands-on participation
Perform inventories, pricing, cost controls, requisitioning and issuing of supplies and equipment for food production
Attends to day to day problems and needs concerning equipment and food supplies, detects and ensures disposition of spoiled and unattractive food, defective supplies, equipment, and other unusual conditions
Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation, and accident prevention principles
Evaluates food products to ensure that quality standards are consistently attained.
Responsible for achieving minimum food service times for lunch and dinner.
Ensures food is always served to specification, both visually and quality wise
Maintains strict adherence to food storage principles.
Develop relationship with local Food Inspection Agency and maintain a minimum ''A'' grade inspection score.
Responsible for controlling unit food cost to agreed target.
Responsible for controlling unit kitchen labor cost to agreed target.
Ensures proper staffing for maximum productivity and high standards of quality, controls food and payroll costs to achieve maximum profitability
Supervise and problem-solve all issues relating to ordering, receiving and storage of food products.
Control wastage to minimize effect on COG.
